Enjoy the beauty of Spring with a Gooseberry Periscope Cocktail

Nothing pairs flavours better than nature itself. It’s no wonder that fruits, flowers, and vegetables of each season align their aromas and flavours with one another to form a perfect harmony of taste.

On our journey into discovering the best Spring Cocktails, we stumbled upon this delicious combination of Cape Gooseberries & Elderflower. Both the fruit & the flower bloom and ripen in Spring – Early Summer period and are usually grown in South America, Central America, South Africa, Australia, India, and China.

Cape Gooseberries are orange coloured berries with a papery husk and look a lot like Sungold tomatoes, however, with a complex flavour. They have the mild tartness of tomatoes and the sweetness that is a combination of flavours like peach, strawberries, mango, pineapple, vanilla, grape, fig etc. Cape Gooseberries are a powerhouse of Vitamin C, Vitamin A, Antioxidants, Calcium, and Phosphorous They can help boost immunity, fight cold & flu, ease digestion, control high blood pressure, increase bone strength, control diabetes, and boost eye vision.

Elderflower on the other hand is light, dainty, and floral. It is more a perfume than a taste. A lychee is closest in taste. Even though Elderflowers are not herbal flowers, they do boost immunity as they are rich in antioxidants. The flowers also contain antiseptic & anti-inflammatory properties. Elderflower extracts are used to treat cold, sinuses, common flu, bronchitis, pain and swelling, diabetes, and constipation.

Gooseberry Periscope

The combination of fresh Cape Gooseberry with the delicate flavour of Elderflower combined with fresh citrus juice and is one of the loveliest cocktails of our time. The Periscope cocktail was created by Matt Gee of the Milk & Honey Bar, New York. We have given it a gooseberry twist that creates a truly pleasant flavour depth.

INGREDIENTS

  • 6 – 7 Cape Gooseberries
  • 45 ml / 1.5 oz GIN
  • 1 oz / 30 ml Homemade Elderflower Pressé. or St. Germain Liqueur
  • ¼ oz / 7 ml fresh Lemon Juice
  • ¼ oz / 7 ml fresh Lime Juice
  • ½ Egg White
  • Garnish: 3 drops of angostura bitters, Cape Gooseberries & Flowers.

The Homemade Elderflower Pressé is far tastier than a commercially bought one. You can control the sweet, sour, and floral notes when you make it yourself.

DIRECTIONS

  • Add the gooseberries (without their paper husk) to the cocktail shaker tin with the Lemon & Lime Juice. Muddle and strain into another shaker tin.
  • Then add the Gin, Elderflower Liqueur / Elderflower Pressé, Egg White along with Ice to the gooseberry & citrus mixture & hard shake & the Dry Shake.
  • Strain into a chilled cocktail glass & garnish with 3 drops of Angostura bitters, Cape Gooseberries on a cocktail stick, and a Flower.

 

Tasting Notes: The delicate perfume and flavour of Elderflower pairs beautifully with the fruity & floral notes of the Gin. The Cape Gooseberries give the drink a fruity flavour depth and add to the citric bite along with the Lemon & Lime Juice. The egg white creates a creamy & silky smooth mouthfeel. Light & zesty with a soft top that goes down fast and easy.
